A Pink and A Green Soup

Since I blogged on Monday about soup, I decided I might as well carry on the soup trend and blog about it on Pink and Green Thursday, as well. As hot as it still is, I thought you might enjoy some cold soups to try. For fun I listed some of the cooking tools you might need to make these soups. Enjoy!


Strawberry Soup

2 cups hulled and sliced fresh or (thawed) frozen strawberries
1 cup orange juice
1 cup vanilla yogurt
1/2 teaspoon vanilla extract
Whipped topping, as needed
Fresh mint sprigs, optional

STEP 1. In a blender, combine all the ingredients but the whipped topping and mint and process until smooth.
STEP 2. Ladle the soup into bowls and top with a dollop of whipped topping.
STEP 3. Garnish with mint, if desired.

Serves 4 people


Avocado Soup

2 avocados
350 ml of water
60 ml of liquid cream
1 small new onion
1 lemon juice
1 garlic clove
1 bunch of coriander
Salt
Pepper

STEP 1. Peel the avocados and place the pulp inside a blender. Pour the lemon juice.
STEP 2. Add the onions, the garlic, coriander and cream. Blend.
STEP 3. Pour the water little by little until you obtain a good consistence.
STEP 4. Salt then pepper and taste to rectify the seasoning if necessary. Serve nice and cold.

Variation : Use basil instead of coriander.
Serves 4 people

  1. Those soups sounds so delicious and I did not know up until reading this post that a strawberry huller was something that I absolutely positively needed to have!

  2. Those soups sound out of this world! That strawberry soup needs to be made in my house asap lol! I eat a lot of strawberries, but I hate strawberry hullers. My great grandma taught me to stick a straw through the bottom and push the top out. the method may be crazy but works wonders.

  6. I obviously did not proof this very well. Too many "mights" and "as wells"--working with 3 year-olds does nothing for my vocab!
