This past weekend Bryan and I went and toured Bingham Canyon Mine, also known as the Kennecott Copper Mine, the deepest open-pit mine in the world. It is the world's largest man-made excavation and can be seen from outer space. In 1966 it became a National Historic Landmark. I had no idea what it really was, but it blew my mind when we got to the top and I saw it.
This is a tire that is one one of the huge trucks. HUGE.
After we toured the mine, Bryan and I went and walked around downtown Salt Lake City. I took this picture from the car as we left the mine.
There is a fantastic shopping area in Temple Square that has everything a girl could want to drool over--J.Crew, Macy's, Nordstrom, West Elm, Restoration Hardware, the list goes on and on. We had a late-night dinner at the Market Street Grill, where I had the Fresh Hawaiian Ahi Tuna and a glass of crisp Pinot Grigio.
I told Bryan that it was the perfect way to spend a Saturday and exactly what I had been wanting to do since we moved. It is always fun exploring a new place and it has only just begun!

Beautiful scenery! Husband's father used to work in a company that mined like that and those tires are huge! They would bring those big trucks into the area in pieces on semis and put the trucks together there, they were too big to be on the road! That dish looks AHmazing!
