Tasty Tuesday-Almost Bang Bang Shrimp


This recipe was delish when I made it for dinner last night. I served it with rice and edamame. If you do not like a lot of batter, do not coat it in flower twice-just dip it in the eggs and then the flour. I found it in a Food Network Magazine that my aunt gave me.

Ingredients

For the Sauce:
nocoupons
1/2 cup mayonnaise
1 tablespoon plus 1 teaspoon Asian chili sauce (such as sambal oelek)
2 teaspoons honey
Kosher salt

For the Shrimp:nocoupons
Vegetable oil, for frying
2 large eggs
3/4 cup all-purpose flour
1/2 cup cornstarch
Kosher salt and freshly ground pepper
1 1/4 pounds small shrimp, peeled and deveined
Bibb lettuce leaves, for serving
Thinly sliced scallions, for garnish

DirectionsMake the sauce: Mix the mayonnaise, chili sauce, honey, 1/4 teaspoon salt and 1 tablespoon water in a large bowl; set aside.

Prepare the shrimp: Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees. Meanwhile, whisk the eggs in a shallow bowl. Whisk the flour, cornstarch and 1 teaspoon each salt and pepper in another shallow bowl.

Working in batches, dredge the shrimp in the flour mixture, shaking off any excess, dip in the beaten eggs, then return to the flour mixture, turning to form a thick crust. Fry the shrimp in the hot oil until lightly golden, 1 to 2 minutes, adjusting the heat as needed to maintain the oil temperature. Transfer to a paper-towel-lined plate with a slotted spoon.

Toss the shrimp with the prepared sauce. Arrange the lettuce in a shallow serving bowl or on individual plates. Top with the shrimp and garnish with scallions.

Spring Trench


Ok, ok, ok, I am supposed to be packing!!! But I just saw this--my fashion icon in my favorite designer (so glad Olivia loves Tibi)! This trench is the epitome of a feminine trench, don't you agree? Oohlala!

Side note: Though I am going on a super fun trip, I am slightly jealous of Em, who will be in Savannah and St. Simons Island this weekend with her bestie. (And shopping at Tibi's store there!)

Love Is In The Air


Happy Pink and Green Thursday, my sweets! Do you have your shopping complete for your sweetie pie's pressie on Monday? Not to worry if you don't, you still have the weekend to figure out the perfect gift. Hubby and I already exchanged gifts--WHAT?? Yep, he got me a bra. So romantic, right? Well......it is actually a new sports bra that I have been desperately in need of. Actually, we have a pretty big weekend planned in New Orleans and that is our Valentine trip. It's time to celebrate the wedding of two wonderful friends!


I can hardly wait to get all dolled up and wear dressy clothes!! No matter how old you get, don't you agree that all girls like to play dress up?


Are you the kind of person that wears orange in the fall, red at Christmas and pink around Valentine's Day? I have to admit that I have packed a little something pink to wear while we play on Saturday.


I cannot figure out what shoes to wear tomorrow night to the rehearsal dinner. I sent Em options yesterday and I am still just blah about them. I guarantee that if I had any of these I would be finding a dress to wear with them.

Busy Week


This is one of those weeks where there just are not enough hours or days! I have so many things that I have to do--projects to work on, kids college teaching proposals due (by noon tomorrow!), Valentines to make, a house to clean, laundry to fold, packing....you get the picture. I'm already ready Friday!
