Simple Tilapia Fish Tacos

I have been down to bare-bones minimum in my pantry and fridge the past week. I have refused to go grocery shopping because we are once again out of town. Wednesday night I made up this little recipe on my own, which turned out to be quite good. Any light fish would work, Tilapia is plentiful around here and I had some in my freezer.



Tilapia Fish Tacos

Tilapia fillets (I used 5)
1 small purple onion, sliced
1 clove garlic, minced
4-5 handfuls fresh spinach
Feta cheese
corn tortillas
white wine
salt & pepper

Drizzle a small amount of olive oil around a pan, heat and then saute garlic and onion (add a splash of wine) until the onion starts to soften, 3-5 minutes. Add spinach one handful at a time (add a splash of wine) until all of it is wilted. Remove mixture, place in bowl and cover. Add a small amount of olive oil to the same pan, heat and then add fish. I let them cook about 2 minutes and then added a little wine. Sprinkle a little pepper on the top while they cook. Cook the fish about 4-5 minutes per side. Using your spatula chop up the fish in the pan, then add spinach mixture to the pan and combine thoroughly. Meanwhile, heat tortillas on your burner (if you have gas) or covered with a damp towel in your microwave. Make tacos and sprinkle Feta on top. Viola! Super easy tacos for a weeknight!

P.S. Why in the world is Blogger messing up again?!? I am really getting frustrated.

  4. I have never made fish tacos before, but now I am thinking I need to try them out asap. And seriously blogger is out of control. I get that they probably have a lot of data but this is ridiculous. I started with wordpress but will never go back it crashed my MAC and that takes talent.
